Cucumber Salsa


This time of year I begin to have wicked cravings for home made salsa.  I have been spoiled from my Brother's skill of making the most wonderful blend of tomatoes, variety of peppers and other spices which he saves each time I make a visit. I'm still trying to get him to share the recipe with me, but I think he's going to take it to the grave. (maybe next year)

In the meantime, my Fiance's Sister Beth also makes a great salsa from her garden.  This variety has cucumbers in the mix and lime juice which have a nice clean taste.  After the second year of trying this tasty appetizer, I had to ask for the recipe and share it.  (Thank you Beth!!)  This is a mild flavor, but to add a little more kick to it you can add a green jalapeno and 2 additional-Tablespoons of chopped fresh cilantro to the salsa.

2 medium cucumbers: peeled seeded and chopped
2 medium tomatoes-chopped
1/2 Cup green pepper-chopped
1 small white onion-chopped
1 clove garlic-chopped
2 Tablespoons fresh lime juice
2 teaspoons fresh parsley
2 teaspoons minced fresh cilantro
1/2 teaspoon dried dill
1/2 teaspoon of salt

You can cut all the vegetables finely and make a cutting board style salsa or coarsely chop all veggies and add to a blender (this is how it is pictured above).  Pulse on a low speed until blended.  Drain excess liquid in a fine colander or strainer.  Allow to chill for 1 hour before serving.

This is great own it's own as an appetizer but it will pair well with lighter beverages such as Corona Beer with lime, or Santa Margherita wine (chilled).  Planning a meal or gathering? Add some quesadillas and taco soup and you're ready to entertain!
