Applewood Bacon and Blue Cheese Dip

There are some nights when the best thing for dinner is something that doesn't require a lot of work.  For such occasions, we always keep an "Emergency" pizza in the freezer.  Somewhere in the fridge is also an "Emergency" beer to go with it.

The dip that went great with the Barbeque Chicken pizza reminded me of hot wings.  I had made this dip on another occasion and made a little thicker version as a topping for a grilled hamburger.

Although there are many types of Blue cheese available.  I like the more pungent and stronger varieties.  This flavor seems to hold up better with the flavorings of pepper and bacon.  Whatever your fancy, you'll find this is the perfect side dish to a quick dinner whether it's pizza, burger, or wings.



Ingredients:

1C sour cream (or can substitute 1C plain Greek Yogurt)
4oz softened Cream Cheese
1/4 - 1/2 teaspoon Montreal Steak Seasoning
3 to 4 slices of Thick, Applewood smoked bacon--cooked and crumbled
4 oz Blue Cheese, crumbled
1 1/2 Tablespoons of dried minced onion

 In a skillet, prepare the bacon.  While the bacon is cooking, Mix the sour cream, onion, steak seasoning and blue cheese together.

Transfer cooked bacon onto a paper towel and pat dry.  Allow to cool and crumble into the sour cream mixture.

Mix well, allow to chill for at least an hour before serving.


This is a great dip for celery and this makes a PHENOMENAL spread for hamburgers.  When pairing with hamburgers, toss in the walnuts for a little crunch and flavor.  Enjoy blue tortilla chips and a Smoky Cabernet Sauvingnon.
